Savory S’mores
We had our first fire of the season in our backyard firepit. Woohoo! And there was great rejoicing in the land. One of the things we love about summer is making s’mores over a fire. Of course the old standby of chocolate, marshmallows, and graham crackers is our favorite, but we discovered a savory alternative that is super yummy.
And making them couldn’t be easier. Simply take some store bought pesto (you can use homemade pesto if you would like) and spread some on a cracker. Next take a mozzarella cheese ball and roast it over a fire like you would a marshmallow. Roast until it is barely turning brown and just beginning to melt. If you wait too long, it will totally melt and you will have a gooey mess on your hands. Put the roasted cheese on the pesto and cracker, and top with another cracker. Voila! A super simple savory s’more. You could also change this up and use pizza sauce instead of pesto. Or add a fresh leaf of basil. Or experiment with different types of cheese. The possibilities are numerous. What’s your favorite?
